This simple healthy chicken recipe is a combination of products from southern France and sunny Italy, and is ideal for removing the chill of winter.
You will need:
2- 6 ounce boneless skinless chicken breasts
1 tablespoon honey
1 tablespoon of olive oil
Salt, pepper and lemon herb seasoning
1 lemon
Buttery flavored cooking spray (no calories)
Step 1: Prepare chicken breasts by pounding each piece between two sheets of wax paper, using the flat side of a kitchen mallet, until about 1/8 inch thick.
Step 2: In a small bowl combine honey and oil, then using a microwave heat on high for 30 seconds, making a glaze.
Step 3: Pre-heat a heavy skillet over medium heat. Spray the buttery cooking spray evenly, coating the pan. With a pastry brush, apply the honey and oil glaze to one side of each cutlet. Season with salt, pepper and lemon herb seasoning. Cook about 3-4 minutes until nicely browned.
Step 4: With tongs, carefully turn cutlets over and again, brush with glaze and season. Cook an additional 3-4 minutes until browned. Transfer cutlets to a platter, drizzle with the juice of the lemon and serve while warm.
